Today is a special day. It’s Leap Year and it only comes around every four years. You know what that means right? It means I have a good ole’ fashioned excuse to celebrate! I’m all about being on time, scheduling time, organizing my time, and assigning time for every teeny tiny bit of the day. Ok. I’m a little OCD on that front, but Leap Year gives me one extra day to get everything done. How cool is that?
So, in true Sara style we celebrated the extra day this month by throwing a Leap Year Birthday Bash with my little guy. The guest of honor? Bacon. No really. It was Hormel bacon.
My little man turned 5-yrs-old this month and since we had an extra day with Leap Year upon us, we didn’t hold back on celebrating his big day. I thought LONG and hard about what his favorite food is and then it dawned on me… Bacon.
Lots and lots of bacon.
He could eat bacon all day.
With the help of Hormel Foods, I scoured through Hormel recipes, cookbooks, Pinterest recipe boards, and even Facebook (my friends are usually the best at pointing me in the right direction), for bacon recipes. See.

Well, we went with a few things I just KNEW my little man would love, such as a bacon wrapped meatloaf (shown above). The really cool part about this is that you can make your meatloaf how you normal would. When you’re ready to put it in the oven, take five minute to add in a little Leap Year flair… the bacon! Wrap the top with Hormel Bacon and cook accordingly. I used the microwave ready bacon because I was using it for other items in my meal and didn’t want to mess with bacon grease in the pan.
Next we grilled up some fresh asparagus and wrapped those suckers in bacon too. Check it out:
We also had home made mashed potatoes with cheese, chives, and bacon pieces to top them off. Last, but certainly not least, were the chocolate bacon cupcakes. Again, I’m all about simplicity. So, I popped a microwavable bag of bacon into our microwave, diced it up nice, and topped our chocolate cupcakes with the bacon bits. Easy Smeasy.
