I’ve, seriously, enjoyed my “Pin of the Week” segment. It’s been such a change in my lifestyle since I became a Pinterest user. That sounds silly, but I’ve found REALLY easy recipes that have little ingredients and are low-cost. I’ve EVEN been making healthy snacks and lunches thanks to all the recipes I’ve found. It’s like we’re a whole new family. No joke.
So, what’s on tap for this week? Well, I love me some squash and zucchini. My children, however, do not. At all. I started searching for recipes that include these vegetables, but provide more taste the kids will love. That’s when I found this Cheesy Zucchini Bake recipe. Oh my sweet tastebuds. It was so easy to make AND the kids enjoyed it too. Score!
I found this easy zucchini recipe on Pinterest, but what I love about all my “finds” is that it really opens me up to finding new blogs and websites. The Easy Cheesy Zucchini Bake Recipe was made by Kalyn’s Kitchen. You have to check her out. You’ll find LOADS of easy recipes with clear cut instructions and pictures AND the best part? I can’t wait to see what else she has for me, but for now?
I had my hand at it and I loved that there were very little main ingredients. You’ve, obviously, got your zucchini and squash, but you also have green onions, fresh basil, and mozzarella cheese.
I, for one, don’t love basil, so I added in spinach. I, also, don’t usually have Thyme at the house so I made due with garlic salt, Italian Seasoning (left over from last week’s “Pin of the Week” Bloomin Pizza Bread), coarse pepper, and a bit of olive oil.
I served it with Crusted Tilapia and roasted potatoes. The kids LOVED it! Definitely putting this recipe to use more often.
