The weeks leading up to Halloween Night are, by far, a chaotic and busy time for parents. There are so many preparations like: costume hunting, candy buying, craft making, class parties, and even meal decisions.
Yesterday, we talked about how to make easy Halloween costumes. You guys had great homemade costume ideas for, both, children and adults. Today, however, I want to talk about homemade in a WHOLE other light…. the Halloween Meal. I know. I know. I cringe at the thought of cooking too, but the fact of the matter is, everyone still has to eat and you definitely don’t want them to be fueled by nothing but sugar. Talk about a candy hangover in the morning. So, what do you guys cook for those hungry ghosts and goblins?
I’ll admit it. I usually order pizza. It’s not very healthy, but it gets the job done. Halloween is so crazy and I’m usually busy perfecting everyone’s costumes or baking/making treats for everyone. This year Halloween is on a Sunday, so this gives me plenty of time to think of a home cooked meal to feed everyone before we set out for our sugary treasures of the night.
Thanks to Nestle, I found a really great recipe that’s easy to make, has a really short prep time (because you ALL want to get back to trick-or-treating), and gives a hint of Pumpkin to enhance the night.
Preparation Time: 10 mins
Cooking Time: 40 mins
Servings: 6 servings
2 tablespoons vegetable oil
1/2 cup chopped onion
1 cup chopped red bell pepper
1 clove garlic, finely chopped
1 lb. ground turkey
2 cans (14.5 oz each) no-salt-added diced tomatoes, undrained
1 can (15 oz.) LIBBY’S® 100% Pure Pumpkin
1 can (15 oz.) tomato sauce
1 can (15.25 oz.) kidney beans, drained
1 can (4 oz.) diced green chiles
1/2 cup loose-pack frozen whole-kernel corn
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
HEAT vegetable oil in large saucepan over medium-high heat. Add onion, bell pepper and garlic; cook, stirring frequently, for 5 to 7 minutes or until tender. Add turkey; cook until browned. Drain.
ADD tomatoes with juice, pumpkin, tomato sauce, beans, chiles, corn, chili powder, cumin and black pepper. Bring to a boil. Reduce heat to low. Cover; cook, stirring occasionally, for 30 minutes.
